Vineyard productivity: 60-70 quintals per hectare
Harvest period: from 10 September onwards, manual harvest
Fermentation: after a short skin maceration, the must obtained after soft pressing ferments in stainless steel tanks at 18-20C, in order to preserve the rich complexity of the aromas.
Maturation: 4 months of permanence of its yeasts with repeated batonnage to put the fine lees back in suspension.
Organoleptic test: bright straw yellow color with greenish reflections, intense. Delicate bouquet, characterized by exotic notes and summer fruits. On the palate a good harmony between alcohol and delicate acid notes. Fresh and mineral.

Total acidity (g / L tartaric acid): 5.8 g / l
How to serve it: excellent as an aperitif, and the natural accompaniment to fish soups, seafood, light dishes based on white meats and cream cheeses.
How to drink: Serve at 8-10C, uncorking the bottle at the moment of consumption.
