Harvest period: from the fourth week of September onwards, manual harvest
Fermentation: harvest at the first hordes of the morning, maceration on the skins for about ten days, at the end of the alcoholic fermentation follows the malolactic fermentation. Aging in French oak barrels, 500-liter tonneaux for twelve months, followed by aging in steel for another six months and three months in bottle before being marketed.
Organoleptic examination: intense dark red color, with violet reflections that evolve towards the grenade. Scents of ripe red fruits, among which cherry and blackberry stand out, of flowers such as violet and dried rose and aromatic herbs. In the mouth it immediately reveals the character of a wine with structure and body, complex but without edges, velvety. Notes of blackberry jam, small red fruits combined with notes of leather and spices. Present but elegant tannin and balanced acidity accompany the wine in the persistent finish.

How to serve it: in combination with savory or spicy first courses, grilled or braised red meats, game, mature cheeses.
