Vineyard productivity: 35 quintals per hectare
Harvest period: from the first week of October onwards, manual harvest
Fermentation: after the destemming-crushing follows a maceration in stainless steel tanks at controlled temperature for about 3 weeks, with a good use of the delastage technique.
Aging: 6 months in French oak barrels, afterwards: minimum 4 months in steel vats.
Organoleptic examination: intense, brilliant ruby red color, fragrant aromas of small red fruits, cherry and blackberry jam, spicy notes of pepper and leather. The taste is soft, persuasive, with elegant tannins and a long-lasting finish, full-bodied.
Alcoholic strength (% vol.): 14.00
Total acidity (g / L tartaric acid): 5.5 g / l
How to serve it: with red meats, roasted and stewed, tasty and spicy first courses, aged cheeses.
How to drink: Serve at a temperature of 16-18C, better if oxygenated in the carafe of consumption.
