Harvest period: from the fourth week of September onwards, manual harvest

Fermentation: after the destemming-pressing, the must ferments for about 20 days at 26-28C with frequent pumping over and punching down in stainless steel tanks in contact with the skins; malolactic fermentation in steel and persistence on the fine lees for at least five crops; aging in French wood for 6 months and subsequent aging in bottle.

Organoleptic examination: intense ruby ​​red color with a purple nail; fresh, spicy aroma with notes of blackberry jam and small red fruits. Taste and rich, with elegant tannins, pleasant structure and body, long persistence.

Total acidity (g / L tartaric acid): 5.6 g / l

How to serve: With savory or spicy first courses, grilled or braised red meats, roasts and game, tasty or aged cheeses.
